"A lovely Filipino-American variation on the traditional crinkle cookie is ube! A common ingredient in Southeast Asian desserts is the purple yam known as ube. Its hue is naturally purple, and it has a mild flavor that is somewhat pistachio and vanilla-like. Both ube halaya jam and ube extract are responsible for the brilliant color and flavor of these ube crinkle cookies"
