Biscoff Cheesecake Recipe
Ingredients:
Crust:
2 1/2 cups crushed Biscoff cookies,
1/4 cup melted butter
3 tbsp. brown sugar
Cheesecake:
16 oz or 4 blocks cream cheese,
1 1/2 cup sugar,
3 large eggs,
1/2 cup whipped cream
1 tsp vanilla
Topping:
Melted Biscoff spread (for a caramel-like topping), crushed Biscoff cookies for garnish
Instructions:
1. Mix crushed Biscoff cookies with melted butter. Press into a springform pan. Bake at 350°F (175°C) for 8 mins.
2. Beat 4 blocks or 16oz of cream cheese. Add 1 1/2 cup white sugar until smooth. Add 3 large eggs one at a time. Then add 1/2 cup whipped cream and 1 tsp. vanilla extract.
3 Pour the cream cheese mixture over the crust. Bake at 325°F (160°C) for 45-50 min or until set.
4. Let cheesecake cool completely.
5. Melt Biscoff spread in microwave (10-15 sec intervals). Drizzle over cheesecake. Sprinkle crushed Biscoff cookies.
Variations:
1. Add a dollop of whipped cream on top of the cheesecake for extra creaminess.
2. Sprinkle more crushed Biscoff cookies on top for added crunch.
Top with fresh fruit like strawberries or raspberries for a burst of flavor and color.
Additional Tips:
1. To prevent cracking, bake the cheesecake in a water bath.
2. After baking, let the cheesecake cool slowly in the oven with the door ajar to prevent sudden temperature changes.
Adjustments for Healthier Version:
1. *Reduce sugar*: Use 1/4 cup granulated sugar instead of 1/2 cup.
2. *Lighter cream cheese*: Use a reduced-fat cream cheese or mix with Greek yogurt.
3. *Less butter*: Use 1/8 cup melted butter instead of 1/4 cup.
