No Bake Strawberry Cheesecake

Creamy no-bake strawberry cheesecake with a buttery graham crust. No oven needed, just chill & slice. Perfect summer dessert 🍓


No-Bake Berry Cheesecake Recipe

Serves 8 | Chill time: 4 hours


Crust:

• 2 cups graham crackers, crushed fine

• 1/2 cup unsalted butter, melted

• 2 tbsp sugar

• Pinch of salt


Filling:

• 16oz cream cheese, softened

• 1/2 cup granulated sugar

• 1 tsp vanilla extract

• 1 cup heavy whipping cream, cold

• Zest of 1/2 lemon


Topping:

• 1 1/2 cups fresh strawberries, sliced

• 1/2 cup whipped cream for piping


Instructions:

1. Make crust: Mix graham crumbs, melted butter, sugar, salt. Press firmly into 8" springform pan. Chill 10 min.

2. Make filling: Beat cream cheese + sugar + vanilla + lemon zest till smooth, no lumps.

3. Whip cream: In separate bowl, whip cold heavy cream to stiff peaks. Gently fold into cream cheese mix.

4. Assemble: Spread filling over crust, smooth top. Chill 4 hrs or overnight till set.

5. Decorate: Top with fresh strawberries + piped whipped cream right before serving.
